1/2 cup butter
2 eggs
3 large very ripe bananas
1 1/2 Tablespoons sour cream or buttermilk
1 teaspoon fresh lemon juice
1 cup sugar
2 cups flour
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1 cup chopped nuts (optional)
1.Combine the dry ingredients in a large mixing bowl.
2.Place the butter, the eggs, the bananas, the sour cream, and the lemon juice in a blender or a bowl of the food processor. Whirl until smooth.
3.Pour over the dry ingredients and add the nuts, if using. Stir until moist.
4.Pour into a greased loaf pan.
5.Bake in 350°F oven for 55 to 65 minutes or until a toothpick inserted comes out clean.
